This mounds cake was shared on our forum. Made with a cake mix,
coconut filling and a thin chocolate icing. The cake is split to make
four layers or bake it in three 8-inch layer cake pans.
A thin cooked chocolate icing is the perfect finishing touch for this yummy cake.
Ingredients
- Cake
- 1 box chocolate or chocolate fudge cake mix plus oil, eggs, and water as directed
- Filling
- 1 1/2 cups evaporated milk
- 1 cup granulated sugar
- 16 regular marshmallows
- 14 ounces frozen coconut*
- Chocolate Icing
- 4 squares unsweetened or bittersweet chocolate
- 3/4 cup brown sugar
- 1/3 cup water
- dash Salt
- 1/4 cup butter
Preparation
Prepare and bake the cake as directed on the package (for a layer cake); split layers.
Combine
the evaporated milk, granulated sugar and marshmallows in a saucepan
over medium heat. Stir until the sugar is dissolved and the marshmallows
melted. Remove from heat and stir in coconut. Put this mixture between
each split layer and on top.
For the icing, melt chocolate with the brown sugar; add salt, water, and butter.
Simmer 3 minutes. Remove from heat. Add 1 teaspoon vanilla; mix well.
Drizzle chocolate icing on top and sides of cake.
