Roasting cauliflower totally changes its character, providing a
wonderfully nutty undercurrent of flavor. You may wonder at my use of
granulated garlic as opposed to fresh garlic, but I've found that the
fresh garlic ends up in the pan while the powdered garlic clings to the
cauliflower, ultimately providing more garlic flavor.

The slower cauliflower grows, in a cool climate, it’s said to increase the sweetness of its flavor. Albeit, cauliflower grows year round, it's the fall and winter months that produce the more flavorful crucifers. When picking the best cauliflower, make sure there aren’t any brown marks or places where brown marks may have been trimmed off the flower. Plus, check the weight and go for the heavier ones. Good to know that a fresh cauliflower will last up to a week in the refrigerator if the outer leaves have been cut off. Best practice is to remove all the outer leaves and the core then cut the flower into smaller pieces prior to putting it into the refrigerator.
Roasted cauliflower can be multifaceted. Case in point, there is even a curious way to make cauliflower kid-friendly chicken nuggets using it.
2. Place cauliflower in a bowl.
3. Drizzle with lemon juice and olive oil.
4. Sprinkle with garlic and salt.
5. Cover bowl with a plate and shake to distribute ingredients.
6. Spread on a baking sheet and cook in the center of the oven until cauliflower is lightly browned - about 20 to 25 minutes.

- 2 Tbsp. olive oil
- 1 lemon; juiced
- 1 1/2 tsp. granulated garlic (or garlic powder)
